Baking has been a love of mine over the years (both making AND eating!), and in my 'I Quit Sugar' weeks i had developed some muffins which have no added sugar, only natural sugars from fruits. Although making a raw transition i still enjoy baking and eating muffins, you can't beat liking a bowl! And am working on making them healthier and sugar free :) Apart from my Banana-blueberry muffins, the other day i made some carrot and chai muffins which were a great success! So today i combined them in what i call a Chai-O-Rama Muffin! Make these and you will feel guilt free and they won't disappoint!!
Chai-O-Rama Muffins (Sugar free)
Prep: 15 minutes | Cook: 15-20 minutes
Ingredients
1 medium banana mashed
1 peeled and grated green apple
1 large carrot peeled and grated
1 egg
½ cup (125ml) water
½ cup (125ml) vegetable oil

1 1/2 cups (250g) wholemeal SR flour
1 Tbsp coconut flour (if you have some)
1 Tbsp Chia seeds
Chai spice mix
½ tsp cinnamon
½ tsp cinnamon
½ tsp nutmeg
¼ tsp cardamon
¼ tsp all spice
¼ tsp ground ginger
1 tsp bi-carb soda
2 tsp baking powder

1 cup fresh or frozen blueberries
Method
1. Preheat an oven to 180 degrees C. Grease 18 muffin cups, or line with patty cups.
2. Mix together mashed banana, grated apple and carrot, lightly beaten egg, water, and oil in a large bowl until combined.

3. Mix in flour, baking soda, baking powder and Chai mix, the mixture will be quite lumpy but as long as there are no flour lumps it is good :)

4. Gently fold the blueberries into the batter.

5. Scoop into prepared patty pans and top with a few chia seeds and shredded coconut and bake in moderate oven for 15-20 minutes until cooked through and lightly brown on top.

6. Enjoy! Eat them while still warm or keep in an airtight container for a few days, or i like to freeze them so they stay fresh!
