This breakfast got me excited for summer!! It is so refreshing :) its a combination of rock melon, raspberries, soaked steel cut oats and chia pudding into one mouth watering start to the day...

Melon and Berry Oat Bomb |
I had about 1/4 cup of chia seeds pudding left over from my breakfast the day before (Chia seeds soaked in water overnight) so the night before i soaked 1/4 cup of steel cut oats (raw) with 1/4 cup of water so that they were ready by the morning.
Ingredients
2 Tablespoon Chia seed pudding
1/4 cup Steel cut oats soaked in 1/4 cup water overnight
1/2 cup chopped Rock melon
Small handful of raspberries
1 Tablespoon of chopped Almonds
1/2 teaspoon vanilla extract
Stawberries and honey to top!

In the morning i added the chia seeds to the oats along with a little vanilla extract, 1 tablespoon of chopped almonds, 1/2 cup of chopped rockmelon and a small handful of raspberries.
This was then topped with a chopped strawberry... too easy! :)
