I came across this recipe and thought with cinnamon and apple i had to try it! So i made a version of my own with what ingredients we had, i just wish we had almond milk left (we need to make some more) as that would have added more of a creamier texture, but i still enjoyed this Buckwheat Chia porridge all the same! This recipe will leave you feeling nourished for hours.

Buckwheat Chia Porridge with Spiced Apple |
Ingredients
1 Tablespoon Buckwheat groats
1 Tablespoon Chia seeds
1/4 cup of water
1 Green apples peeled and chopped
1 Tablespoon of cranberries or chopped dried apricots
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
Drizzle of honey or maple syrup
Methods/steps
1) Soak the Chia seeds and Buckwheat in the water overnight in the fridge until the mixture has reached a pudding-like consistency.

2) Combine Chia and buckwheat groats with the vanilla and cinnamon, mixing until well-combined and let it sit for five-ten minutes. Add in the chopped apple, cranberries or apricots and cinnamon and mix together.

4) Top with an extra drizzle of honey, i also added some coconut and serve!

Alternatively you can only soak the chia seeds and the next morning grind up the buckwheat groats to a powder and mix with some almond milk to add a creamier texture (i didn't have any almond milk left!).
