Ch-ch-ch choose Chia!

Sitting on the patio in the sun on a lovely April 1st I am eating my Chia seeds and soaked Buckwheat with cacao, coconut, LSA, pumpkin kernels... all the goodies!

And I came across these 12 benefits of Chia seeds! I know I have mentioned them before but I still cannot be amazed at these little wonders and although April fools day I fool you not! You must choose Chia :) Why??


1. Chia is gluten free
2. It is super high in dietary fibre, making it great for digestion and healing digestion issues.
3. It contains 20...% Omega 3 ALA, making it a super food for the brain and heart. Chia has eight times more Omega 3 than salmon! (still love my salmon though :P)
4. It boasts 20% protein
5. The protein is a complete protein with all 8 essential amino acids
6. It is high in antioxidants (It has a four times higher ORAC value than blueberries)
7. Chia contains five times more calcium than a glass of milk
8. Chia contains seven times more vitamin C than oranges
9. It contains three times more iron than spinach (another necessity for women in particular!)
10. It contains twice the potassium content of banana
11. It is food for healthy skin, hair and nails
12. It has a positive impact balancing blood glucose levels (making it awesome for diabetics)
Chia makes a great egg replacement. Just combine with water to form a gel, and add it to recipes that call for egg.


Not sure what to do with them….try these little tips

Soak them over night and put fruit, almond milk, and some cinnamon in them... Voila! breakfast cereal! I love soaking them with raw buckwheat in water overnight then adding LSA, almonds, pumpkin kernels, coconut and cacao powder in the morning and protein powder if you like!

Or Chia Pudding? 3 tbsp chia seeds into 3/4 cup of almond milk, 1/8 tsp vanilla, 1 tsp agave. Let it sit for 30 minutes in the fridge and it’s like a yummy chia pudding!

Add one tablespoon to your morning smoothie - this also adds a thicker consistency if you let it rest for 5 minutes or so :)

To substitute for an egg: Use 1 tablespoon finely ground chia seeds (grind them dry in a blender, food processor or coffee grinder) and 3 tablespoons of water per egg in a baked recipe (does not work in place of eggs for omelets though…

For a healthy energy gel, add a couple tablespoons of chia seeds to a cup of coconut water. Let sit for about ten minutes and you’ll have an incredible energy gel! Beats the socks off of Gatorade for hydration and energy and you get to avoid the fake colours, fake flavours and GMO

Wash your face with it as a gentle exfoliant!

Keep them in your emergency storm, camping, earthquake etc…kit. You will be able to survive for weeks without food, if you have these.

All I know is I LOVE Chia, it has become a staple to my diet :) Ch-ch-ch choose chia!

Benefits of Lemon water in the morning :)

Every morning when I wake up, the first thing I do is splash my face and drink a nice big glass of water. There is nothing better than feeling the cool cleansing water rinse away the problems of yesterday to start you afresh for a new day! Our bodies are around 70% water by weight and it's important to stay hydrated. While drinking water throughout the day is beneficial, drinking water first thing when waking has unique benefits such as helping to lower stomach acids which cause reflux and keeping you regular by stimulating your bowel movements. I have heard a lot about adding lemon juice to my daily water but I admits have never given it a good thought, then I came across the

A Part of Me - 8 Weeks in!

While I have been loving my new training program and my weights (especially when little changes start happening!) I find it hard to fit in as much cardio as I use to with the weights. Basically all I use to do was run, for 14 years! now after starting my weights training and having an injury preventing me from running, about 75% of my exercising is weights... I miss my cardio!! More so I miss my running... I miss the large part of me it was and inside still is.

Running to me is freedom, its a way to simply be me.
while any exercise or hobby is freedom and lets you be you, to me there is nothing better than letting your feet fly off the ground and having the sense of flying where nothing can touch you or pull you down, each moment in the air, you are freeeeeeeeeee.


I was given the OK to introduce running back into my life in April.... 1 week from now. But I have a confession to make, I ran the other day!! Well it was 100m of the slowest run in my running history being so sensitive to each step I took, then I stopped, walked and did another 100m. I didn't care if it was slow and awkward, I had a taste of that freedom I am addicted to and the world and I felt right again, even if only for a moment.

I have finished 8 weeks of my weights now and have slowly but surely increase the weights I have been using!! my hands are developing little 'warrior calluses' as I like to call them :) So for this week (week 9) I am having a different tune. It is important to mix up your workouts and surprise your body just as much as it is to rest. So I am doing a little of both, not doing the weights but treating myself to some group Les Mills classes such as pump, balance, rpm and having rides outdoors along the beach. But on Tuesday I am having another appraisal to develop another routine for the next 8 weeks (Yay!).

I am excited to change it up almost a much as I am to introduce running again... all limbs and digits crossed I can be injury free!! I had a wonderful Sunday at the gym with a 'Mega launch' including 4 tracks of Pump, 3 tracks of Step, 2 Body combat, 2 cx works and 4 of Body Balance... I loved it if not for the enthusiastic instructors dressed in pink with bunny ears for doing some step and combat again which I have not done for about 2 years!! Needless to say after the 2 hours I was pooped but so happy :)

So we will see what this week and the coming weeks bring, I am ready for a few changes, hopefully for the good if they work out and ready to take my fitness to new (and old!) levels :)

Greener than Green 'Pick me up' Smoothie

Some days are harder than others, and when you come home you need a pick me up or something to spoil yourself to remind you that harder days don't mean they must deprive you of things you enjoy whether great or small! So whipped up a 'Greener than Green' smoothie on account of putting in double the spinach leaves that I usually do topped with s nice dose of spirulina!


It was the first time I used Rice milk in a green smoothie as I usually just use water but I liked the softer and slightly more wholesome taste :)

What I used...

2 Handfuls spinach leaves (or mix with kale!)
1 tablespoon Chia seeds
1 small frozen banana
1 tablespoon shredded coconut
2 teaspoons vanilla extract
2 teaspoons honey
1/2-1 teaspoon Spirulina
1/4 cup water
1 cup Rice Milk (or almond/any milk you have!)

Top: Frozen blueberries and coconut


Place in a blender (spinach leaves first) and blend on high for around 30 seconds, I like to use the pulse setting a few times to really mix it up!

Top with some fresh or frozen blueberries and some coconut (optional) and you have you delicious greener than green smoothie to pick up any day!
 

I would have added some protein powder but... I ran out! Still I like the idea of having a few days protein powder free as too much of one thing is never really a good thing, its nice to give the body a break.

It was a delicious end to a harder day! And I was ready to finish the day treated in a Green, healthy and fresh fashion... Oh Green and Clean how can I live without you?! Happy face :)

Ironman Iron!

Iron... it is one of the most heard of minerals around, an abundant metal on Earth and essential to most life forms and to normal human physiology. It is the only mineral which females require a higher daily requirement than males. It is a master of a mineral that can ultimately bring us down when too low (or even too high!). But why is it so important??

Iron is an integral part of many proteins and enzymes which maintain our good health and an essential component of protein involved in oxygen transport, regulation of cell growth and differentiation. Two thirds of our iron can be found in haemoglobin - the protein in red blood cells which carries oxygen to our tissues. Other amounts of iron can be found in myoglobin, a protein which helps supply oxygen to muscles and in enzymes to help reactions in our body. It is also stored for future needs and regulation by absorption in out intestines. Therefore the main functions of iron are to:
  1. Transport and store oxygen
  2. Aid in energy production and cell diffusion
  3. Help the immune system and central nervous system
The most common reason iron comes up in our everyday life is when we become deficient known as iron deficiency aneamia. A deficiency of iron limits oxygen delivery to our cells and results in fatigue, poor concentration and decreased immunity. However excess amounts such as a condition known as haemochromatosis can result in toxicity which can also cause lethargy and fatigue.

Some of the most common symptoms of iron deficiency are:
  • Fatigue
  • Weakness
  • Rapid heartbeat
  • Fainting
  • Susceptibility to infection, and
  • Swelling of the tongue
Common causes of iron deficiency in adults include:
  • Inadequate dietary intake – the two types of iron include haem iron (found in animal foods) and non-haem iron (from plant products). The body absorbs haem iron much more easily than non-haem iron. There are many reasons why the dietary intake of iron could be inadequate, including a poorly balanced vegetarian diet, chronic fad dieting or limited access to a wide range of fresh foods – for example, as a result of living in remote areas or having a low income.
  • Blood loss – iron deficiency easily occurs in situations of chronic blood loss. Common causes include heavy menstrual periods, regular blood donation, chronic disorders that involve bleeding (such as peptic ulcers, polyps or cancers in the large intestine) and certain medications, particularly aspirin.
  • Increased need – the adolescent growth spurt, pregnancy and breastfeeding are situations when the body requires more iron. If this increased need isn’t met, a deficiency can quickly occur.
  • Exercise – athletes are prone to iron deficiency because regular exercise increases the body’s need for iron in a number of ways. For example, hard training promotes red blood cell production, while iron is lost through sweating.
  • Inability to absorb iron – healthy adults absorb about ten to 15 per cent of dietary iron, but some people’s bodies are unable to absorb or use iron from food.

Every red blood cell contains haemoglobin, a complex protein that carries oxygen. Haemoglobin is partly made from iron and accounts for about two thirds of the body’s iron supply. The body stores iron for use during times when dietary intake is inadequate.
If your need for dietary iron isn’t met, your body’s iron stores will decline over time due to:
Iron depletion – haemoglobin levels are normal, but the body only has a small amount of stored iron, which will soon run out. This stage usually has no obvious symptoms.
Iron deficiency – stored and blood-borne iron stores are low and haemoglobin levels have dropped below normal. You may experience some symptoms, including tiredness.
Iron deficiency anaemia – haemoglobin levels are so low that the blood is unable to deliver enough oxygen to the cells. Symptoms include looking very pale, breathlessness, dizziness and fatigue. Reduced immune function and impaired growth and cognition can also be symptoms.
 
 
So how can we make sure we get enough iron? Firstly its important not to self diagnose iron deficiency and take supplements as there are many causes of fatigue and decreased immunity which should be investigated for and too much iron can also cause fatigue. Too much iron can also impair absorption of other minerals such as zinc and copper. Your body can only absorb iron and cannot excrete it. Furthermore iron supplements often lead to unwanted symptoms such as constipation and abdominal discomfort. Make sure you are eating a variety of the right foods with a higher iron content....
  • High-risk groups such as vegetarians, adolescent girls and women athletes need to eat iron-rich foods each day (combined with foods that are high in vitamin C).
  • Wholegrain cereals, meat, poultry and fish are good sources of dietary iron.
  • Liver is an especially rich source of iron, but pregnant women should avoid this source because of its high content of vitamin A.
  • Choose iron-fortified breakfast cereals and breads.
  • Vegetarians who exclude all animal products from their diet may need almost twice as much dietary iron each day as non-vegetarians. Sources include dark green leafy vegetables, such as spinach, broccoli, prunes, dried apricots, raisins, nuts, seeds, dried beans and peas, and iron-fortified cereals, breads and pastas.
  • Vitamin C increases iron absorption, so eat more brightly coloured fruits and vegetables.
  • Cut back on the amount of tea and coffee you drink, especially around mealtimes, since the tannins in tea and coffee bind to the iron and interfere with absorption.
 
 
 
 If you are worried about your iron levels, have a quick blood test at the doctors and see if it is causing you fatigue, iron deficiency can be easily fixed so we can all be Ironmen throughout the days!

My Simple Meal Delights - Easy and Clean Salads

I realised I post a lot of baking, smoothies and breakfast and not much about lunches or dinner, so over the past week I took a few snippets of simple meals easily made throughout the week which I love to make AND eat!

This first one is of course with my home grown alfalfa sprouts with salmon, avocado, tomato, sweet corn and mushrooms with turmeric and cumin... definitely a favourite lunch of mine!!

The 'Egg-cellence' of eggs can never be over exaggerated, both yolk and the white! I LOVE poached eggs and am introducing a healthy post workout breakfast/brunch with poached egg, mushroom, tomato, spinach leaves and avocado on toast (with some cracked pepper) but I can't wait to make my own bread from few recipes I have found (stay tuned!)

After my alfalfa sprouts had finished I sprouted some buckwheat, these only take 2 days and have only a small white tail on their ends. I used the sprouted buckwheat like rice with dishes such as this slow cooked apricot chicken dish I made with onion, zucchini, apricots and mushrooms complete with vege's on the side!

I also added buckwheat to lunch salads, this one had egg, spinach leaves, sprouted buckwheat, tomato, avocado, corn and mushrooms...

A really simple one with spinach leaves, tomato, capsicum, avocado and tuna! Who said simple cannot also be so tasty??

Another Salmon salad with spinach leaves, sundried tomato's (yum!), avocado, cous cous and grated fresh turmeric on top... watch out this makes your fingers go yellow!

Last but certainly not least, I have a confession to make... I am addicted to making 'Scromelette's!' What is a scromelette?? It's basically things you would put in an omelette (and more) made into a scramble with eggs... mine usually feature tomato, spinach leaves, mushroom, zucchini and many spices such as turmeric, cumin coriander, oregano and a mix of them all! Then sided with some broccoli and sweet potato :)

Who said healthy can't be both quick, fresh, clean and tasty! You can see a little trend with foods i love... salmon, eggs, avocado, sprouts, buckwheat, mushrooms, tomato, spinach leaves, sweet corn (raw), broccoli... and behind every meal I am usually munching on a carrot with a new fetish of carrot with peanut butter! Strange but strangely good ;)

Salad and Sprout!

Salad and Sprout... it kind of sounds like 'Twist and Shout' from the Beatles and that's exactly what salads and sprouts make me feel like doing! After a little drought from growing my sprouts... sorry now I can't stop rhyming haha, I decided to utilise my little green house again, and after 4 days of harvesting my little alfalfa seedlings, I had abundance of sprouts which lasted for days!! and I only used 2 tablespoons of seeds/2 little rows! They are wonderful to incorporate into salads, so crisp and fresh and full of goodies... you can do just about anything with sprouts :)

I came across this wonderful explanation of why sprouts are so good for you from a site called 'Disease Prevention' found here...

I had a bit of an experiment with salads and have to tell you of this one which is so tasty! I cooked up some lentils, added an abundance of sprouts, mushrooms, avocado and tomato's topped with turmeric and cumin, yum :)

Rawin Rice Green Smoothie

With my new craze of rice milk which I am slowly becoming addicted to, I decided to make a Sunday experiment with a rice milk green smoothie.


PLUS I was so excited my mum got me my own little bottle of the super spirulina for my birthday which of course when in the smoothie too! And it was sooooo yum... I had to try get every last drop :P


Here is what I put in :)

1 handful of spinach leaves
1 tablespoon chia seeds
1 cup Rice and Chick pea (or almond) milk
1/2 scoop Raw protein powder (optional)
1 teaspoon spirulina powder
1 teaspoon vanilla extract


Mix in blender for 30-40 seconds and serve! Or drink straight from the mixer if you wish ;)

4 Week Progress :)

It takes 4 weeks for you to notice your body changing, 8 weeks for your friends and 12 weeks for the rest of the world.... don't give up! I have just passed the 4 week mark, it has gone rather quick! And I am excited to be feeling little changes happening myself, I don't care how small they are, they are changes all the same, and it makes me motivated and determined to keep going :) So this post is a little tracker of my changes, you may not be able to see them, but I can start to feel them...
