Chocolate Berry & Apple Pie - Raw Desert!

Hearing about a raw apple pie i had to have a trial of making my own apple-berry pie with a touch of chocolate cacao in the base! I was pleasantly surprised by this delicious raw desert, it is so fruity and fresh and at the same time satisfies any craving for a traditional desert pie!!

Chocolate Berry & Apple Pie
The pie base is based around the raw brownie recipe, you could use cashews for the nut as these have less flavour but i only had walnuts so used those with some LSA :) This recipe makes 4 small tarts and can be doubled to make one large pie!

Crust ingredients:
1/2 cup walnuts
1/4 cup chopped fresh dates
2 Tbsp shredded dried coconut

1 tsp cacao powder
1 tsp honey
2 tsp LSA (optional)

Apple pie ingredients:
1 medium apple
1/4 cup chopped fresh dates
1/4 cup frozen blueberries
1 tablespoon lemon juice
1 teaspoon cinnamon

 Methods
1. Place all crust ingredients in the food processor. Process until the mixture sticks together and the dates are well processed.

2. Divide mixture into 4 and press crust mixture into your pie crust/tart dish. Press the crust down firmly in your dish with your hands. (Crust is now done!)

3. Core and  roughly chop the apple (you can leave the peel on), and place all filling ingredients in the food processor. Process until it's well mixed, you might have to pause and scrape the sides and then process again. Add the blueberries and process until mixed.

Apple-berry mixture :)
7. Divide the wet mixture on top of the crusts and smooth out with spoon.

8. Cover and freeze for at least half an hour, then it is ready to serve! Top with some coconut and blueberries and you are ready to indulge!

Keep this raw pie recipe in the freezer or else it will get soggy in the fridge. I used a Granny-Smith apple but any kind can be used. Alternatively you can omit the blueberries and the cacao powder and make a simple raw apple pie! If you do this slice an extra apple BUT mix the extra apple slices into the apple mixture instead to create a different texture.

You could also try adding banana instead of apple and make a chocolate banana pie!!! Drooling... i think that one is next! Or you could add 1 Tbsp of cranberries or raisins to the wet mixture. Once again the choice is up to you and your taste buds! If you know how to make some maybe a touch of raw whipped cream too?

Either the Choc-Blueberry or plain apple pie will keep in the freezer for around a week so you can make them in advance or for the week ahead :) Enjoy!
