Fruity-Tuity Nut Pudding - Raw

This recipe is derived from the amazing Rawtarian as a desert but i couldn't resist and had to try it for breakfast! Isn't it wonderful when foods originally meant for desert are so nutritious they can also become your breakfast?? I'm certainly not complaining :)

This originally made quite a dense pudding with a cup of dates so i have reduced the amount of dates and added some seeds mixed in after the processing, and the result was a juicy, fruity and flavoursome breakfast which was perfect for a warm summer morning - yum!

Fruity-Tuity Nut Pudding
Ingredients
3 dates (soft)
1/4 cup nuts (pecans/walnuts/almonds/combination)
1 medium orange (well peeled, cut off white rind)
1 large apple (peeled, cored, roughly chopped)
1/2 teaspoon orange zest (outer orange peel)
1 tablespoon LSA (optional)
1/2 teaspoon cinnamon (or 1/4 teaspoon cinnamon + 1/4 teaspoon cloves)
1 tablespoon cranberries (or raisins)
2 teaspoons pepitas
1 teaspoon pumpkin kernels



 Methods
1. Add all ingredients to food processor EXCEPT RAISINS. Process very well.


 2. Add raisins, pepitas and pumpkin kernels and mix :)

3. Top with a little coconut and cherries and you have your Fruity Tuity ready to go!
