Home Made Pumpkin Soup

There is nothing better than a warm soup on a cool night, or a home made soup with home grown vegetables! I LOVE my mums pumpkin soup, the recipe is from one of my mums friends from 25 years ago and we still make it now with her same blender from 25 years ago too! It is soooo yummy and completed with a little zing of cracked pepper on top. Here is the recipe, its a keeper :)

Ingredients
750g pumpkin chopped
2 onions
250g potatoes chopped
3 chicken stock cubes
4 cups of water
1/2 - 1 cup of cream
Salt and pepper

Mums old blender has done us proud! (and still is :))
Methods
1. Put chopped pumpkin, sliced onions, chopped potatoes, stock cubes and water in a large saucepan.
2. Bring to the boil then simmer until the vegetables are tender (depending on the rate of simmering this can take 20min to 1 hour)
3. Puree in a blender, add cream to a desired consistency and salt and pepper to taste.
4. Reheat in a saucepan for 5 minutes stirring
5. Serve and enjoy!
