Zucchini Noodles and 'Taco Meat' - Raw

After a trip to Samudra Cafe in Dunsborough i was keen to try raw zucchini noodles! I could not go past another raw cook book which had some amazing noodle dishes in them, i think its far to say i am adding to a nice little collection!


After a quick hunt for a spiraliser, i decided not to buy the only one we found on impulse and instead research which ones i could buy to make vegetable spaghetti and noodles. BUT hidden away in our cupboards was a grater which resembled a spiraliser and made perfect raw 'noodles!' All i had to do was cut the zucchini into small chunks, compress it onto the grater and twirl away, too easy :)

Who said you need the latest equipment to experiment with raw foods?? This 'grater' will do perfectly for now :) You can make raw noodles from zucchini, carrot, squash... any vegetable that will withstand the pressure and will not 'mush' together. I had to be careful that the zucchini didn't compress under the grater as my noodles would have turned to mush.

The noodles can be added to a salad, dish or as a side. I found this great recipe for 'Raw Taco Meat' which i can't wait to try with these, thank you Rawtarian! :)

Raw Taco Meat



Ingredients
1 cup walnuts
10 sundried tomatoes, soaked for at least one hour, preferably a few hours.
1-2 tablespoons olive oil
Chili powder (start with 1/4 tablespoon, then add more to taste)
Cayenne powder (start with 1/8 teaspoon or less!) (This measurement has been revised and is better now!)
1/2-1 tsp sea salt

Methods
1. Soak your sundried tomatoes for at least one hour. Drain and pat dry before using.
2. Simply add all ingredients to the food processor and blend until it become the consistency of the photo above.
