'Lets Go Nuts' Biscuits - Raw

Crepe's, check! Dried apples, check! Next up on my dehydrator list was some raw biscuits! Well the recipe i found was for some nut bars but i altered it and made my own 'Lets Go Nuts' Biscuits because quite frankly i am going nuts about my dehydrator and my new found raw food! If you don't have a drhydrator you could even turn these into some nutty snack balls to put in the fridge or freezer for the healthy munchies or pick me up, BUT i finally made my biscuits :D

'Lets Go Nuts' Biscuits 

Ingredients
3/4 cup almonds
1/3 cup Brazil nuts
4 dried apple pieces (only 4 as i dried these the other day they are sacred to me!! otherwise use 1/2 cup)
1 tablespoon pepitas
1/4 cup mixed sultanas and currants
1 cup shredded coconut
1 teaspoon ground cinnamon
1/2 cup raw honey

Soak the nuts, apples, sultanas currants and seeds for 8 hours or overnight in enough water to cover by about 2-3cm. Drain and leave to drip dry for about an hour.

Put the soaked ingredients, coconut and cinnamon in a food processor and blend until you have a granular consistency (i did about 30 seconds). Add the honey and blend again for around 60 seconds until you have a moist dough.


Use your hands to form bars or biscuits. My biscuits were around 3cm in diameter and made 22 biscuits, and place on the dehydrator mesh screens allowing 3cm between biscuits.

Dehydrate at 41 degrees (105F) for 16-20 hours depending on how crisp you like the biscuits. I did mine for 16 hours and they were crisp on the outside but still a little chewy on the inside (how i like them!). Then remove and set to cool for 30 minutes and they will firm up.

Store the biscuits in a tightly sealed container in the refrigerator for up to 2 weeks or at room temperature for up to 1 week. What's so good about these biscuits in they are a wonderful portable snack for work, uni, the gym, backpacks... anything as they do not soften or melt :) They are a wonderul source of vitamins B and E, zinc (for healthy skin, hair and nails), calcium, selenium, magnesium, iron, protein, natural carbohydrates and fibre!
