Apple and Apricot Paleo Porridge - Raw

This mornings breakfast was inspired by the 'A team'... Apple, Apricots and Almonds. Which was then followed by the rest of the alphabet with Blueberries, Coconut, Cinnamon and of course Chia seeds. Oh and there are some Pepitas in here too! In the end it is like a Raw Paleo Porridge, so refreshing :)

Apple and Apricot Raw Paleo Porridge
Ingredients
1 medium Green apple
2 tsp Chia seeds
2 Tbsp water
2-3 dried apricots
1 small handful of almonds
1 small handful of pepitas
1 Tbsp of shredded coconut
1/2 tsp cinnamon
1 small handful of Blueberries

Extra - almond cream!!

Chop up a small handful of almonds and 2-3 dried apricots and on the side with 1 Tbsp of shredded coconut and a small handful of pepitas. Peel and grate 1 medium green (or red) apple...


Soak 2 teaspoons of Chia seeds in with 2 Tablespoons of water while sitting for 2 minutes...












Add to to the Chia seeds the apples, almonds, apricots, coconut, pepitas and 1/2 a teaspoon of cinnamon and mix together...



I was so excited when i came home as mum had made some almond milk! On the side there was some almond cream, so i added a little dollop of the almond cream to the top with some organic Blueberries... delicious!
