Macanut Truffles

Reading up about the benefits of Maca powder i was inspired to start using it in my diet! There are a number of Maca truffle recipes i have found roaming the internet, but this one i devised from what ingredients we had which is similar to most truffle recipes...

Macanut Truffles

Ingredients
3/4 cup cashews
1/4 cup almonds
1/3 cup rolled oats (NOTE: we did not have oat groats which would have made the recipe Raw)
1 Tbsp Maca Powder
1 Tbsp Coconut flour
1 Tbsp Maple syrup
2 Tbsp Honey
1 tsp Vanilla
1/3 cup Cacao nibs
Optional: shredded coconut to roll on top

Add the oats, cashews and almonds to a food processor and blend until they resemble crumbs...

Process the nuts!
Add the Coconut flour, Maca powder, maple syrup, honey and vanilla and process until the mixture clumps together...

I had to transfer the mix to a bowl to stir in the Cacao nibs as our little old processor is a little too small! It does the trick though which is all that counts, and the result is some amazingly tasty little Macanut truffles.


This recipe made 25 truffles
Although for any time these truffles could make a wonderful and healthy Christmas truffle too! Next time i will substitute the Cacao nibs for some chopped cranberries which will make them look more like Christmas, Cacao powder or cinnamon could also be added for some extra flavour and experimentation, but these are another little favourite of mine :)
