Berry Dressing and Spinach Salads - Raw

I walked into the Kitchen today to see my younger sister diligently cutting strawberries and raspberries with a blender in site and i wondered what she was up to with those glorious red fruits! 

She soon introduced me to the wonderful combination of a Strawberry and Raspberry dressing! The original recipe had Red Balsamic vinegar but to make it Raw substitute the balsamic for Apple Cider Vinegar :)

1/2 cup chopped Strawberries
1/2 cup Raspberries
1 Tbsp Apple Cider Vinegar  
2 Tbsp Flaxseed oil 
Cracked Pepper to taste

Mix the strawberries and raspberries in a blender with the ACV, flaxseed oil and cracked pepper until combined.

So what goes with the Berries? Spinach :) There are many wonderful recipes out there with strawberries and spinach, the rest of the ingredients which you can add to your salad vary widely! Nuts are often included: toasted or candied pecans, walnuts or almonds are most common. Sometimes pine nuts, poppy seeds or sesame seeds.Red or green onions can add to the appearance, even other fruits such as mandarins, mango or oranges.

This one my sister made with Spinach, peas freshly picked from our own garden and chopped almonds, drool...

Mine included spinach leaves (picked from our garden), avocado (another love of mine!), chopped almonds, grated carrot and pepitas. You could easily add chopped tomato, beans, capsicum, cucumber... anything you like! That is the beauty of this berry dressing with spinach leaves, you can still mix it up in so many ways and it will always taste DELICIOUS!

The dressing is so refreshing with the salads and perfect for summer... cannot wait to make more of these salads!
