Golden Rough Chia Pudding - RAW

Inspired by 'Girl on Raw' i decided to try a Golden Rough Chia Pudding recipe, it is described as like eating desert for breakfast with a combination of coconut and chocolate and i definitely have to agree!!

Golden Rough Chia Pudding

NOTE: Golden Rough is a popular chocolate bar in Australia made up of chunks of coconut pieces (such a great flavour combination :))

Ingredients - 
SERVES 1
1/4 cup raw Almonds soaked overnight and drained (cashews can be used)
1/2 cup water
2 teaspoons Cacao powder
3 Medjool dates pitted
Few drops of vanilla extract (and lemon juice if available)

1 Tablespoon of Chia seeds
1 Tablespoon of shredded Coconut


Optional topping - Raspberries, blueberries, strawberries... any fruit :)

Soak almonds in around 1/2 cup of water for at least 2 hours or overnight and drain.

Place all ingredients (except the coconut and chia seeds) in a high speed blender until smooth. (I could just eat that now!)
Ready, set....
Blend!
Mix the Chia seeds and coconut into a bowl (i also added a little more water so the Chia seeds could soak it up!) Pour mixture into the chia seeds and coconut and mix thoroughly. The chia seeds will take on a gelatinous texture/appearance as the seed can soak up to 10 times is weight in water. Leave for 5 minutes then stir again.

I cut up some rock melon to have with it and put a dollop of almond cream on the top! :)


You can put it in the refrigerator for half an hour to chill/set or eat it right away and enjoy!!! Dessert or Breakfast :)
