Banana and Peanut Butter Cookies

I love Peanut Butter, and i go bonka's for banana's!! I have been trying to make a good Sugar-free cookie recipe with these 2 ingredients for a while and i found the benefits of almond meal in cooking to make these tasty treat, sugar free and a good source of protein pre and post workout! They are so simple and easy to make too :)

Banana and Peanut Butter Cookies
Makes 24 cookies

Ingredients
1 1/2 cup almond meal
1/2 teaspoon baking powder
3/4 cup natural peanut butter
1 large banana mashed
1 large egg beaten
1 teaspoon vanilla extract
Optional - natvia sweetener to taste and 1/2 cup desiccated coconut

Method
preheat oven to 180C and line a baking tray with baking paper.
In a medium bowl combine almond meal and baking powder. In another bowl combine peanut butter, banana, egg and vanilla extract and Natvia if desired.
Add the dry ingredients to the wet ingredients and mix but do not over mix.
Drop tablespoon amounts of mixture onto the cookie tray and bake for 10-12 minutes until slightly golden. Leave on the tray a further 5 minutes then transfer to a wire rack to cool :)


I used Sanitarium Natural Peanut Butter as it also has a low sugar content, try to aim for anything less than 8mg/100g (particularly for diary products) but the less you can find the better!
