Date, Walnut and Raw Cacao Protein Balls and The Raw Brownie

After mum and i went to Natural Temptation i was inspired by their Nutty-Cacao protein balls which were really tasty! And i found this recipe i want to remember to try from the 'Organic Cook' ...

Date, walnut and raw cacao protein balls

One of the main nutritional ingredients in this recipe is for brain health - walnuts. They are rich in essential fatty acids, vitamin e and also a good source of manganese and copper.

Raw cacao is also rich in minerals particularly Magnesium, chromium and iron.... girls eat as much as you like!! It is also higher in vitamin C than any nut or seed and has the highest antioxidant content of any food (more antioxidants than green tea, acai, red wine, and goji berries COMBINED) and is a great source of tryptophan and serotonin to help lift any mood :)

Dates are a good source of fibre and contain high levels of potassium, magnesium, copper and manganese, they do have high contents of fruit sugar but are a good alternative for those wanting to cut back on sweets and confectionery.

These balls are so yummy and this recipe is very simple. Great as a snack to help you power on in the day.

1 cup fresh dates (take seeds out)
1/4 cup raw cacao
1/2 cup organic shredded coconut to roll mixture in
1 cup raw walnuts
Organic coconut oil (optional)

Throw all these ingredients in to a food processor and whizz until mixture is like a dough then roll into small balls, roll in the shredded in coconut and keep in the fridge.

I would also like to roll them in pepitas or pumpkin seeds for an added crunch!
Mum also found a great 'raw brownie' recipe from another great site 'My New Roots' 
The Raw Brownie 1

Ingredients:
2 cups whole walnuts
2 ½ cups Medjool dates, pitted
1 cup raw cacao
1 cup raw unsalted almonds, roughly chopped
¼ tsp. sea salt

Directions:
1. Place walnuts in food processor and blend on high until the nuts are finely ground.
2. Add the cacao and salt. Pulse to combine.
3. Add the dates one at a time through the feed tube of the food processor while it is running. What you should end up with is a mix that appears rather like cake crumbs, but that when pressed, will easily stick together (if the mixture does not hold together well, add more dates).
4. In a large bowl (or the pan you plan on putting the brownies in), combine the walnut-cacao mix with the chopped almonds. Press into a lined cake pan or mold. Place in freezer or fridge until ready to serve (it is also easier to cut these when they are very cold). Store in an airtight container.

I'm going to be exploring these sites some more!! I'll be hunting these sites for simple and great healthy recipes so one day when i have my own healthy cafe one day i will have a collection of recipes i have tried, tested and added my own flare to which will be all ready to go :) A fit doctor owning a healthy cafe? an exciting goal ahead...
