Buckwheat Porridge - Raw

Day 5 of Raw food breakfasts and I find myself missing my usual muesli and oats! So i investigated the alternatives and found Buckwheat Groats. The groats (not the kasha type) have not been rolled under heat and are therefore still raw, however you need to soak them first! So i put ours in some water overnight, part buckwheat and 2 parts water and by morning they were ready to go! This recipe is inspired by Renegade Health :)
Buckwheat Porridge
Ingredients (I made 2 lots of 1 cup serves)
1 cup Raw Buckwheat groats (soaked in 2 cups of water for a minimum of 1 hour or overnight)
1/2 cup Almond milk (or any non-diary milk)
2 tsp Chia seeds
1 tsp Vanilla extract
1/2 tsp Cinnamon
1/4 cup chopped Almonds
1/4 cup chopped Walnuts
1 Tbsp Pepitas
1 Tbsp Sunflower kernels
4 dried Apricots chopped
1 Tbsp Shredded coconut

Extra on top: Blueberries and Honey

After buckwheats have been soaked, drain them in a strainer and rinse a couple of times...

Chop the nuts and apricots and have on the side...



Place Buckwheat in a food processor (I left out a tablespoon to add to the porridge un-processed for the extra texture) along with the milk, Chia seeds and vanilla and process for 5-10 seconds until a porridge like consistency...

Porridge!
Stir in the nuts, seeds, apricots, coconut and the cinnamon...

Add the extra's
Top with a drizzle of honey and blueberries and your porridge is ready to go! I love adding nuts and seeds and apricots which made it almost like a porridge muesli, but anything can be added. Banana, strawberries or raspberries would be great with this porridge even without all the nuts and seeds, you palate will help you decide :)
