Chicken Vegetable Stir Fry

I love stir fry's, there's something about a delicious plate of fresh vegetables and chicken in soy sauce that always reminds me of home! My mum loves ginger which makes this stir fry extra tasty :)

Chicken Stir fry
Ingredients 
500g Chicken tenderloins cut into cubes
1/3 red onion chopped
2 cloves of garlic crushed
1 tablespoon ginger finely grated


Sauce
3 tablespoons of honey
1/3 cup soy sauce
1/2 cup oyster sauce
1 clove garlic crushed
1 teaspoon ginger finely grated

5 cups of chopped vegetables - brocolli, cauliflower, beans, asparagus, carrot, capsicum
Optional - peanuts


Chop vegetables and cook in microwave for 4 minutes until slightly soft.

Vegetable delight!
Meanwhile heat a little oil in a pan and cook the chicken for a few minutes until cooked through and lightly browned. Add the onion, crushed garlic and ginger and mix through until onion is soft.



Cooking Chicken 
 Mix the honey, soy sauce, oyster sauce, garlic and ginger in a small bowl or mug, add to the chicken and stir through. Add the microwaved vegetables with a little of the juices for extra fluid and stir through simmering for 1-2 minutes.

We served our stir fry with wild rice... yum!
