The Ultimate Raw Brownie

I am so excited to have finally made my first Raw Brownie!! what i love about this recipe is the honey adding to the sweetness (you can tell i am a sweet tooth) and the added coconut flavor. I absolutely LOVE dates and had to stop myself from eating them all before i could turn them into a Raw Brownie but i am so glad i left them for this recipe. Plus it is so simple! All you need is the ingredients and a food processor. I used mums 30 year old little processor poor thing i think i gave it quite a shock, we both look forward to getting a new food processor very soon :) I also added 1/2 cup of chopped almonds to mix in at the end as i like the added texture and crunch!

Ingredients
1 cup walnuts (you can use pecans)
1 cup fresh dates
5 tablespoons raw cacao (cocoa) powder
4 tablespoons shredded unsweetened coconut
2 tablespoons honey or agave nectar
Extra: 1/2 cup chopped almonds

Ingredients at the ready! (Proof i left the dates)
Method
1. Place walnuts alone in your food processor and process until small and crumbly.
2. Add dates and process again until the dates are processed and the mixture sticks together.

You can do it little processor!
3. Add the cacao, coconut and honey and process again until the mixture turns a lovely dark chocolate brown. Stop processing before it gets too buttery to allow pressing into the pan.
4. Press the mixture firmly into a brownie dish or small cake pan and press down firmly using your clean hands.
5. Refrigerate for a couple of hours and slice once chilled.

The Brownie can be stored in the refrigerator :) Enjoy... i know i will!!!

Yum :)
