Protein Pancakes with 3 basic ingredients!

I am so proud of my younger sister, she has recently joined the gym!! Now the 'Three Musketeer' sisters can be found at the Exercise Club around the corner mostly pumping iron in Les Mills Body Pump! To help her diet and body along she has started having protein shakes after her weight sessions. While i value going Raw and using wholesome foods for nutrients including protein i can understand her trial of the protein shakes and still support her with her supplements (See my entry on Protein powders), after all she has come this far making a first wonderful step to join the gym and increase her muscle mass/tone up it is all a step wise progression! So this morning i had come back from a good CX30 and Bike interval session to find her getting out of bed for the later pump class and took the opportunity to make my very own PROTEIN PANCAKES for her pre-workout boost! This has got to be the simplest recipe i have found, perfect for those in a busy lifestyle or who do not have the various alternative ingredients such as almond meal. The basis is 3 ingredients...

Sarah uses Hydroxyl 'Ripped' protein powder
1/2 of oats
1 Scoop of Protein Powder (I used vanilla)
3 egg whites



I have to admit i have a big dislike to wasting food and can't bear the thought of throwing out good egg yolks so used 2 whole eggs instead which still has the same amount of protein if not more.

From here simply combine ingredients in a bowl and mix. You can add a handful of blueberries or a small mashed banana to the mixture if you wish but i like to decorate the pancakes with the fruits instead.

I also added 1 Tbsp of LSA and 1 Tbsp of almond meal with a touch of milk for some added nutrition.
Heat a non-stick frying pan on medium heat and cook pancakes until golden.



Top with reduced fat natural Greek yoghurt and chopped banana, strawberries, blueberries.. any fruit you fancy! And some coconut if you like :)

I think i could rival Jamie Oliver with his 15 minute meals here, this one only took me 10 including chopping time! So my sister went to the gym loaded with protein as well as the wonderful benefits of wholesome fruits and yoghurt to get the most out of her workout AND her day. And me... it wasn't raw but i have no doubt i benefited from the protein and fruits in more ways than one! It seems i was not the only one who could not get enough of these, i have no doubt our little budgie Percy will have wings bulging in no time... I love making good food :)
