Sesame Beef Patties with Roast Sweet Potato and Beetroot Salad

Being home means i finally get to experiment with all meals of the day. While i am designating my breakfasts and most of my lunch to raw foods, dinner is a chance for me to investigate not raw, but clean and healthy, easy and tasty meals. But FIRST they must pass my dads taste buds which do not include very spicy food, SECOND they must be substantial, include vegetables, be lean and easy to make especially on days where my mum goes to work in the evenings and needs an early dinner. So i mixed around a few recipes i have seen and tried these Sesame Beef Patties with Roast Sweet Potato and Beetroot Salad. They originally started out as a simple and unexciting meal but turned out better than we thought they would for their simplicity! I want to remember these for uni days next year :)

Ingredients (Serves 4-6)
500g lean Beef mince 
1 Brown onion finely diced
2 Tablespoon sesame seeds 
2 Tablespoons Sweet Chili sauce (we also added 1 Tablespoon of Chili Jam we had!)
1 egg lightly beaten 
1 Tablespoon Olive oil 

500g Sweet potato/Kumara cut into cubes 
2 medium Beetroot cut into cubes 
1 Tablespoon Olive oil 
1 teaspoon finely chopped Rosemary 
100g Spinach leaves (or Rocket) 
1 Tablespoon Balsamic vinegar

6 Asparagus chopped
Small handful of beans

Method:
Pre-heat the oven to 180 degrees Celsius.
Cut the onion, sweet potato, beetroot, beans and asparagus.

Roast salad - Cook the sweet potato and beetroot in the microwave for 4 minutes until slightly soft.
Strain and place on a baking tray drizzled with olive oil and rosemary and roast in the oven for around 20 minutes, turning at the 10 minute mark.

Patties - Mix together the beef mince, onion, sweet chili sauce, egg and sesame seeds in a bowl until combined and mold into around 16 small patties. Heat a large frying pan on high with a little olive oil, cook the patties for around 3 minutes each side until cooked through and browned.

Meanwhile cook the asparagus and beans in the microwave for 3 minutes until soft and transfer to a small serving bowl. When the sweet potato and beetroot are roasted transfer to a serving bowl with the spinach leaves and drizzle with the balsamic vinegar.
