My Little 'Dare Devil' Muffins


What's life without a little daring adventure every now and then? While becoming a study hermit limits my outdoor adventures, my dare devil flare of the day turned out to be with a combination of Sweet potato, Carrot and my all time favorite Cacao powder mixed into to one healthy (and tasty!) muffin! There is no guilt trip with these muffins, you will have the hint of chocolate but i assure you it is only the super power of the cacao! The mashed vegetable give the muffins a moist texture with a crunchy edge, plus they have an abundance of nutrition which you can get whilst still enjoying your morning or afternoon tea treat. Sounds too good to be true? Take a little dare devil time to try this combination and see for yourself :)

P.S. did i mention they only take 25 minutes to make including vegetable preparation time??

'Dare Devil' Muffins (Sweet Potato & Cacao)

1/2 cup White SR four
1/2 cup Wholemeal SR flour
1 cup of Rolled Oats
1 tsp baking powder
1 tsp baking soda
1 tsp ground sage
2 Tbsp Cacao powder
2 cups mashed carrots and sweet potato (about 3 medium carrots and 1 medium sweet potato peeled, chopped and cooked in the microwave until soft)
1 egg lightly beaten
1/4 cup Olive oil (or vegetable oil)
1 tbsp white vinegar

Mix all the dry ingredients until well combined. Add the mashed carrot, sweet potato, egg, olive oil and vinegar and stir until just mixed. Scoop into prepared muffin tray and bake in preheated oven at 180 degrees for 25-30 minutes until a prick comes out clean and lightly browned on top.

My tip for my next batch... swap the sage for a little chili flakes, it will give that little extra flare the sage is trying to create!
